Share with me, please!


I am pretty sure, pretty positive, I feel WORSE with this pregnancy than I did with my first one. I still have no energy, no appetite, and the thought of having to make dinner EVERY.SINGLE.NIGHT makes me want to die. Which, is definitely not me! I LOVE making dinners :)

I could leave it up to hubby, but I am not down with frozen meals every night - which for the record, is exactly what he did the first time around. But now that we have a little to feed, I am not ok with that! ;)

So, can you help me please? Can you share with me some EASY crockpot recipes or casserole receipes I can quickly throw together when I get home?

I would really, really appreciate it! As would my family! I know they miss a decent dinner!!

I have a really good cookbook called Fix It and Forget It Lightly. I use it a lot. My other go to source is a blog called mamaandbabylove.com she has some really good, whole food, recipes.

Hope you are feeling better soon! Take care of yourself :) An easy dinner for us is to roast cherry tomatoes. You can do this the day or so before - just drizzle olive oil on the tomatoes and put a little garlic in too if you want. Roast at 375 till they shrivel up. The roasting sweetens them up. Toss the tomatoes and oil with pasta and then top with parmesan cheese.

Make a pot of the Velveeta Mac and Cheese, shells. Add a can of tuna, drained. Tuna casserole!

A jar of spaghetti sauce and a few chicken breasts. Frozen is fine. Throw all this in a crockpot. Let it cook all day. The chicken will thaw and cook, and eventually become shreddable.

Cook a separate pot of pasta when its close to the time to eat. Then ladle the sauce with chicken onto the pasta. I did this once, it was good.

These are freezer meals but all most done in the crockpot.

CONGRATS!!!! I didn't know you were pregnant again. Yay! I was also going to suggest the chicken breast and tomato sauce in the crock pot.

How about making fried rice? You can bake brown rice (google Alton Brown's method, but you don't have to boil the water first like he says). Put the brown rice in a large wok or skillet, then add in frozen mixed veggies, scrambled eggs, and a meat if you want. Season w/ salt and pepper and soy sauce. You can even make the rice ahead of time. Make a big batch and eat it for several days!

Sorry to hear you're under the weather. My fav crockpot dinner is pulled pork. Just simmer the pork butt all day until it's tender and pulls apart. Add bbq ssauce and you're done!

Try chicken breasts covered in salsa. You can then shred it when it becomes really tender and serve it with tortillas and other taco fillings. Yum! Hope you are feelin better soon :)

My go to easy crockpot meals are pulled pork or shredded beef. For the pork, I cheat and use a packet of clubhouse seasoning and just follow the directions on that. For the beef, I just use a can of manwich. Either way, just put the meat in the crockpot, pour on the sauce, and wait for the meat to start falling apart. Then you can serve it on buns, over baked potatoes, or in sandwiches.

Neither of these are really natural foods, but a good compromise rather than running through the drive thru or calling for pizza.
