Lemon Blueberry Loaf

Lemon Blueberry Loaf

This recipe was SUPER easy and is SUPER good :) I found it on Tasty Kitchen, a recipe by How To: Simplify and then couldn't resist making an addition to it - adding that special 'farm' touch ;)

You Need:

  • 1 Egg
  • 1 Cup Milk
  • 3 tbs oil
  • 2 cups AP Flour
  • 1 cup Sugar
  • 2.5 tbs Baking Powder
  • 1/2 tsp Salt
  • 2 Cups of Blueberries
  • Zest of One Lemon (shhh, this is my 'farm touch' secret!)
Wisk the first three ingredients together. In a seperate bowl, combine all other ingredients except the blueberries. Then add the dry mix to the liquid mix just until combined. Fold in your blueberries and then pour batter into a bread loaf pan that has been greased and lightly floured.
Bake on 350* F for 55-60 minutes - cool for 10 on rack - then remove from pan - ENJOY!
