Recipe: Portabella Feta Wraps

I made these for lunch over the weekend - they were fabulous - yes, fabulous! Even my husband, who rarely considers anything a meal if meat of some kind is not included, gave a 2 thumbs up! It's my own take on a 1 similar recipes I found in a BHG Cookbook I have.

Clearly I can't take photos of food and make it look like something you'd want to eat!

Feta Portabella Wraps


4 - 6 flour tortillas (depending on the size of your tortillas, you may need 4, possibly 6)
1 package slice Portabella's (or probably 3 large Portabella heads, sliced)
2 cloves garlic
1 1/4 cup white beans - navy or cannellini work well
1/4-1/2 cup olive oil
Squeeze of lemon juice
Salt & Pepper
Feta Cheese
Italian Dressing
Greens - I used Romain Lettuce and Chard I had out in the garden

Place your Portabella slices on a broiler pan, brush them with Italian dressing and let them sit while you prepare the spread.

Put your beans and garlic cloves into a food processor and blend it together. Slowly add the oil as you do this. Add enough to reach your desired consistency. Splash with lemon juice, s&p to taste and give another blend.

Broil your Portabella slices 6-8 minutes, turning about half way through the cooking time. I had my broiler set to high.

Lay out your tortillas, spread your bean mixture on each, lay greens on top of the bean spread, take your finished Portabella slices and lay them over the greens, sprinkle with feta cheese, drizzle some more Italian dressing over them and roll your tortillas.

That's it! So simple - so good! We had one half a tortilla left over; I wrapped it in wax paper and ate it the next day, cold, and it was still delicious!

Harvest Monday, June 20, 2011

The harvest this week was slim again since our garden is just getting going. I am hoping the flood of rainstorms we had tonight didn't do in the 'mater garden. Time will tell.

Allen harvested another Portabella this past week. This bad boy was HUGE - a Whopper. It weighed in at 5.22 ounces all by itself.



Just to help you understand how big this shroom was, it compares to my 15 week olds head! :)
Don't mind him practicing his boyish charm - picking his nose.


And, in an exciting change of events, my garlic did in fact produce scapes. I thought, for some reason, I wasn't going to get any this year as it seems later than usual for them to appear, but alas, hubby spotted them! I have no idea what kind of garlic we have. It was here when we moved in 3 years ago and sprouts up in our front yard in some landscaping where iris, lillies and hostas are planted!

We harvested 2.72 ounces of garlic scapes which will be made into pesto asap!


And, the rest of the weekend I worked on turning 8 qts of lovely Strawberries (from my Amish neighbor) into jam! I did one batch of regular Strawberry jam which gave me 3 half pints and a little extra. As I type this up, hubby has already devoured 1 half pint and the extra! I also made two batches (4 half pints) of Strawberry Balsamic Pepper Jam - YUM -- DEVINE!





Opps...and I almost forgot. I harvested one onion as I pulled it to see how they were doing. So, I guess it was more of a scallion ;)

QUESTIONS!! I have three plants I need to get into the ground...all of which will be my first time growing and I am looking for any advice you can offer if you grow one of these :)


Fennel: I read that no other veg really likes fennel so I guess I need to plant this away from everything else? Does it spread?


Horseradish: I read this will spread like wildfire and some people plant it into the ground in a pot. Suggestions? Do you plant by other veggies?


Rhubarb: I came home Friday and hubby surprised me with a Rhubarb plant. I would [ideally] like to get three more and have an area with 4 of them planted. I read they like rich soil and sun. Suggestions? Do you plant this by other veggies you have?

Harvest Monday, June 6, 2011

We finally got the gardens in! Well...I do have a few more things to plant here and there, but for the most part, it is done :) Wahooo!

This is the main garden...

These are 'garden boxes' Allen put together. One has Strawberries, the other Soy Beans for Edamame.



And this is the Tomato/Basil/Onion garden with 4 squash plants in the corner ;)




This past week I harvested 'Onion Scapes'



And more Portabella's! 5.5 ounces in caps and 6 some ounces in stems.



I also harvested some lettuce and cilantro but forgot to weigh it! It is so nice to just run out the back door and grab what I need when I am cooking! I used the cilantro in a beef satay last night...oh my gosh, you HAVE to try this recipe. It was wonderful! It does have a kick though, so tone down the Sriracha if you can't handle the heat!

And since we were in the yard & gardens all weeekend, this was my helper!

Harvest Monday - Memorial Day!!

One .... Just ONE Strawberry!

Hubby & I shared it ;)

Actually, last night my niece and I picked 2 more ripe ones!


This photo was taken Thursday evening....my KY Pole Beans are sprouting! I am so excited! I was worried that the seeds may have washed away or rotted out with this INSANE amount of rainfall we have had. Thus far it looks like 7 out of the 8 I planted around this pole have come up!

We'd enjoyed more lettuce from our lettuce patch for dinner during the week, but I already forgot to weigh it!


In other gardening news, we were hoping to get our main gardens in today and it looks like it STILL won't happen :( Hubby gave them another till last night and they are so muddy from all this dang rain that the tiller actually got stuck. Allen had to hook tow chains up to it and lift it out of the mud/garden with our tractor front end loader!!!! Keep your fingers crossed that we have NO rain this week so the beds dry up and the veggies can go in!

Growing Portabella's

For hubby's birthday, back on Valentine's Day, I got him a mushroom growing kit! He'd been talking about how he thought it would be cool to grow our own mushrooms - especially since we'd eat them with every meal if we could - so I ordered a kit online for Portabella's!

Yesterday, we finally got to try some out!



Hubby is checking on how it want's to harvest them and was snapping his own pics on his cell phone.


Look at this sucker. Pretty impressive for home grown I say!

Harvesting Portabella's...


I washed them all down ... well, I wiped them with a damp cloth. Did you know that is how you are supposed to clean mushrooms?

Here is a cap all prepared to be grilled :) Sorry, I can't get over how lovely they look!!



And here are all the stems. I wiped 'em down too and I am going to use them for soup -- or a sauce. Any suggestions?
